Sumac or rhus is a familiar flavorful name in Iranian food, especially kebab. From childhood we pour sumac on our own barbecues imitating our fathers and mothers. The appearance of sumac is so similar to pepper so sometimes we might mistaken it with pepper and make our food spicy rather than sour. The color of the sumac varies from red brick to dark purple depending on the type and growth of the plant. In different countries, sumac is used to dye fabric, leather color, treatment of diseases and even in Iran it is one of the item of  Haft-seen table . It is interesting to know that in Iran the famous sumac of Tabriz, Sheki and Khorasan are in red and Damascene sumac is in brown color. Medicinal sumac contains three types of industrial, French and American, and industrial sumac is derived from its gum called Japanese lacquer.

Aromatic sumac is one of the types of sumac found in North America and Argentina. After removing the fruits from the cluster stalk, they are rubbed and as a result of this rubbing the usable crust is removed. Today, crust  is separated from the core by mill. After sifting and removing the seeds, sour crust can be used. Sumac is composed of  6.9%  moisture, 4.7% oil, 6.2% protein, 6.14% fiber, 8.1% ash and 63.8% water soluble extract. If you want to grow sumac, you just need to graft it through cuttings, and  duplicate seeds.

To dye your hair naturally, you can make the sumac leaf and apply it to the hair. When you catch a cold and have sore throat, make some sumac and gargle it. For fat burning, you can also eat sumac brewed or eat half a teaspoon of sumac with water after each meal. To treat oral pest, simply rub the sumac on the finger and hold it for a few minutes on the pest site. But remember that eating too much will lead to poisoning. If your children have diarrhea, you can treat them significantly with sumac.
